Gluten Free Pastries
So what happens to the croissants that don't quite "make the cut'? They turn into delicious danish. These are generally filled with organic jam, but we've also tried them with an organic chocolate spread which is also quite tasty.
After you taste these croissants, you won't believe that they are gluten free; but they are! We offer two versions of this beauty, the Original that uses a blend of organic rice flours, potato, and tapioca starch. The other uses organic rice flours, tapioca and organic sorghum flour (for people who are sensitive to nightshades).
These tasty treats were the result of lots of failed croissant dough. Rolled out, shaped, and filled with either organic jam or organic chocolate hazelnut butter, they are a delightful treat in their own class.
